Comfort Food

The other night Andrew and I were watching an episode of "Chopped" (one of my favorite shows) and the theme was comfort food. Throughout the episode the true definition of comfort food was debated.  So what comes to mind when you hear "comfort food"? For me, comfort food often involves bread and by that, I'm talking about homemade bread. Fill warm bread with cinnamon, leave it in our kitchen and consider it gone! My favorite "breakfast" bread of all time is my grandmother's zucchini bread. Growing up she would make multiple loaves at a time using zucchini picked right out of her extensive garden. A Lot of Granola

Have you ever made something and completely underestimated how much that recipe would yield? That happened to me today. I decided fall is officially here and making homemade granola sounds like a great way to welcome my favorite season. I searched high and low on Pinterest for inspiration. There are HUNDREDS of combinations. I found that when it comes down to making it, the base is always the same- an oil of choice, sweetener of choice, oats, and anything you would possibly want in a trail mix.  I started by getting a very (very) large bowl out and mixed together 4 cups of thick cut gluten free oats, 2 tsp salt, and 1 tablespoon of Saigon cinnamon.
