Last night I made a spice rubbed pork tenderloin but felt that it needed a flavor punch so I created this sauce. It packs sweetness and a lingering kick of spice!
Apricot Honey & Red Pepper Sauce:
In a small sauce pan, combine 1/4 cup apricot preserves, 1/4 cup Nature's Golden Honey, 1 tablespoon of olive oil, 1/2 teaspoon of red pepper flakes (add more if more heat is preferred), a pinch of salt and pepper.
Slowly bring to a simmer, stirring every other minute.
After 5 minutes, remove from heat (sauce will thicken up as it cools).
Serve with your choice of protein (we highly recommend the pork).
It's amazing how a sauce can completely change a dish. I plan to make more fruit sauce/chutney soon, it balances meat so well. What are your favorite fruit and meat pairings?
